Nuskha-E-Shah Jahani

Taking inspiration from scripts written by King Shahjahan’s royal chefs in the 17th Century included in Nuskha-E-Shah Jahani – I have created an assembly of 5 key dishes that together can make for a special dinner for a small group of four. The menu includes lamb shanks nihari, zewar i bihist (yakhi palao with fruits and nuts), shami kababs, rumali roti and deghi murg.
